This was a collaboration with Travis Weige of Weige Knives. He’s one of the best in the business, and his cutlery can be found in some of the finest restaurants across the U.S. The idea was to design a chef knife that could be your day-to-day “go to” knife—a perfect size for the most at-home applications.
And, beautiful. We had one-of-a-kind pins custom made just for these knives. For the handle we chose Texas spalted pecan wood, and paired it with a gorgeous red linen micarta bolster, in reference to the bravery symbolized by the red of the Texas flag.
The blade is American made 440c stainless steel, emblazoned on one side with the Weige Knives mark, and on the other, with my brand’s (No. 4 St. James) distinctive star point logo.
